Chunky Guacamole

Remember when avocados became crazy popular in the mid-2000s and guacamole was the dish to bring to potlucks? Well, we definitely jumped on the avocado & guacamole train and have never looked back since. This guacamole recipe is our family & friend’s favorite recipe. We like to keep the avocado chunky to give the dip texture and add a little olive oil to bring all the ingredients together.

Ingredients
  

  • ¼ cup red onion finely chopped
  • 2 tomatoes medium, finely chopped
  • 2 cloves garlic peeled and minced
  • 2 green chilies serrano or jalapeño, finely chopped
  • ¼ cup cilantro chopped
  • 2 avocados medium, ripe but firm
  • 1 tsp olive oil
  • 2 tbsp fresh lime juice
  • salt to taste

Instructions
 

  • Place onions, tomatoes, garlic, chilies, and cilantro in a mixing bowl.
  • Remove the seeds from the avocados and gently scoop out the avocado’s halves. Dice them into small pieces. Add the diced avocados to the other ingredients in a bowl.
  • Add oil, salt and lime juice to the avocado mixture. Taste and adjust the salt and lemon juice per your taste. Serve guacamole at room temperature with your favorite chips.
