Garlic Smashed New Potatoes

Crispy, garlicky, a little spicy, and buttery are just a few of the words to describe these scrumptious potatoes. Whenever we make these, half of them are gone straight from the baking sheet. We definitely recommend doubling the recipe.

Ingredients
  

  • 1 lb new potatoes
  • 4 tbsp butter melted
  • 3-4 cloves garlic minced
  • ½ tsp dried rosemary
  • ¼ tsp crushed red pepper
  • salt to taste
  • freshly ground black pepper to taste

Instructions
 

  • Preheat the oven to 450 F and prepare a baking sheet by lining it with parchment paper.
  • Wash the potatoes and place them in a deep pot. Cover them with water and add a pinch of salt and bring them to a boil over medium-high heat. Boil the potatoes for 10-15 minutes, until cooked through.
  • While the potatoes are boiling, mix the butter, garlic, rosemary, and crushed red pepper together.
  • Drain the potatoes and place them on the baking sheet.
  • Using the bottom of a glass or a potato masher, press down on each potato to about ½ to 1 inch in thickness, keeping them in one piece.
  • Sprinkle salt and pepper over the potatoes. Brush each potato with the butter mixture.
  • Bake the potatoes for 15-20 minutes until crispy. No need to flip in between. Serve hot.
