In a small pan, heat up 1 tbsp of olive oil over medium-high heat. Add the onions and the garlic to the pan and reduce the heat to medium. Let the onions cook and caramelize, stirring occasionally, for about 30 minutes.
While the onions are cooking, in a large bowl add all of the meat (whichever you’re using), garlic powder, parsley, mint, oregano, coriander, cumin, all spice, cayenne, salt, lemon zest, and 2 tbsp of olive oil.
Once the onions are done, add them to the bowl too. Mix until all the ingredients are just combined.
Divide the mixture into four equal parts and use your hands to make each part into a patty about a 1/2-in thick.
Add some olive oil to a hot skillet and place the patties on the skillet. Cook one side for 4-5 minutes and flip the burgers and cook for another 4-5 minutes. Adjust cooking times for your desired doneness. You can also grill the patties.
Serve the burgers hot with any toppings you like.
